Kunafa is a Turkish and Middle Eastern dessert built from shredded phyllo dough, baked golden, then soaked with sweet syrup. At Anatolia the plate is S$19.90 and 100% halal, with two variants to pick from: Plain, or with a scoop of ice cream on the side. The whole appeal of kunafa is the contrast: shatter-crisp phyllo on the outside, soft syrup-soaked strands underneath. Most kitchens either over-soak it and lose the crunch, or under-syrup it and leave the texture dry. Ours is baked, then syruped at the right moment, so the strands stay crisp on top and warm through.

Taste and Texture

Crisp phyllo shattering into sweet, warm strands. The syrup carries a touch of lemon to keep it from turning cloying, and the ice cream variant adds a cold contrast that softens the sweetness. Not a heavy dessert once the portion is set right.
